Red Beet Hummus Recipe
One of the greatest joys of I.O.N. is getting to be a part of our customers’ lives. Roasted Beet Hummus Recipe
Ingredients:
Serves 6 people
1.5 cups beets – chopped into 1” cubes
2 cups cooked chickpeas
Juice of 1 lemon
zest of 1/2 lemon
2 minced garlic cloves
2 tablespoons tahini
1/4 cup of olive oil
Instructions:
Place beets onto a baking sheet and drizzle with olive oil. Cover with tinfoil and roast for 45 minutes until soft.
Let beets cool to room temperature.
In a large food processor, combine chickpeas, cooled beats, and all of remaining ingredients. Blend until smooth and creamy.
Serve with carrots, cucumbers, pita bread – and anything else you’d like!
