Chocolate Frosting Recipe

We were caught off guard by how happy vegan cupcakes make people, and we still don’t 100% understand it. Our cakes were always popular, but when we introduced cupcakes a few years ago, they were really popular.

People call ahead to see what we’re making for the week, they order them as appetizers, and sometimes they’ll stop by for no other reason than to buy a single cupcake. We once served up thousands of mini-cupcakes in just a few hours at our infamous cupcake -tasting event.

We don’t know what makes people go crazy over vegan cupcakes, but we’re glad they do. And we think it has something to do with the frosting.

Chocolate Frosting Recipe

Ingredients:

  • 1 block of silken tofu
  • 4 tsp coconut oil 
  • 3/4 Tbsp vanilla extract
  • 1/3 cup maple syrup
  • 1/4 cup cocoa powder
  • 1 1/3 cup vegan chocolate chips (melted over stovetop) 

Instructions:

  • Process tofu until smooth.
  • Add next 4 ingredients and continue processing until smooth.
  • Finally, add melted chips and you guessed it - process until smooth! 

We frost and sell cupcakes immediately, but if you're baking at home, it stores well for several days in the refrigerator!
